Summer watermelon & ginger crush
INGREDIENTS
- 1kg piece seedless watermelon, skin removed, cut into chunks
- 2 cups ice cubes
- 1/4 cup fresh mint leaves
- 2 tablespoons caster sugar
- Thumb size piece of fresh grated ginger
METHOD
Place watermelon in a blender until finely chopped. Add the ice, mint, caster sugar and fresh ginger.
Serve over ice, immediately in a nice tall glass and sip away.
Use a few chopped up pieces of naked ginger on top for garnish (and extra deliciousness!).
